HOMESTYLE BARBECUE

Looking on the cookery bookshelf at our weekend cottage north of Auckland I see we have seven barbecue cookbooks but I reckon I could get rid of them all now that I have this new large format soft-covered title, the latest in Murdoch Books highly-rated Homestyle series.

The book contains over 150 receipes, is easy to use with each recipe being accompanied by an appealing photograph of the finished dish along with step-by-step photos of the techniques involved. As with all Murdoch Books cookery titles every recipe has been triple tested in their test kitchens.

Whether you are a beginner or an expert or just want to extend your barbie cooking range this book is ideal with recipes ranging from dressing up sausages or a burger through to more sophisticated dishes that can be cooked n the barbecue and then served in the dining room as part of a special dinner.
For example – pork sausages – most of us would buy the sausages at our local butcher, take them home, unwrap them and simply throw them on the barbie.
But here we are given a way to add to the eating pleasure as follows:

Make a simple herb marinade:
3 tbs olive oil
2-3 tbs lemon juice or balsamic vinegar
1-2 cloves garlic – crushed
3 tsp soft brown sugar
4 tbs chopped mixed herbs – any all of chives, lemon thyme, rosemary, parsley, basil, coriander, mint, oregano or marjoram.

1.Combine marinade ingredients in a bowl. Season well.
2.Prick sausages all over and marinate, covered in a non-metallic dish, for at least three hours, or overnight in fridge.
3.Preheat barbeque to medium. Drain the sausages, discarding the marinade. Fry the sausages for about 8-10 minutes, or until cooked through, turning during cooking.

Or if you are more experienced, or are more adventurous on your barbecue then you can make the Malaysian barbecued seafood, the Cajun-blackened fish with pineapple salsa, or the Hoisin barbecued chicken, fillet steak with onion marmalade, lamb chops with citrus pockets or pork loin chops with apple chutney or any of the 150 delicious recipes to be found in this most appealing book. A great book for the summer holidays, and beyond. Roll on Boxing Day.
